chicken caesar smash tacos

INGREDIENTS
6 Farrah’s Taco Tortillas
450 - 500g Chicken Mince
1 Iceberg Lettuce, Shredded
1/2 Cup Parmesan, Shaved
6-7 Strips Streaky Bacon

Caesar Seasoning
1 tsp Smoked Paprika
6 tsp Dried Oregano
4 tsp Dried Parsley
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Salt
1/2 tsp Fresh Cracked Pepper

Caesar Sauce
1/2 Cup Mayonnaise
1/2 Lemon, Juiced
1 Clove Garlic, Minced
1/4 Cup Parmesan, Grated
2 Tbsp Olive Oil
Salt & Pepper

METHOD

  1. In a bowl, combine all caesar sauce ingredients and season with salt and pepper to taste. Set aside.

  2. In another bowl, add chicken mince and caesar seasoning ingredients and mix well to combine. 

  3.  Divide the chicken mince mixture into six, then roll into balls.

  4. Preheat BBQ hot plate (or large frying pan) to medium high heat, then cook streaky bacon until crispy. Remove from heat, drain on a paper towel, then chop into chunks.

  5.  Pop a chicken pattie onto the grill and place a tortilla on top, using a burger press or spatula to flatten the two together. Fry until chicken is cooked through, roughly 2 minutes, then flip and cook until the tortilla is lightly grilled. 

  6.  Remove from the grill and top with shredded lettuce, shaved parmesan, and chopped bacon. Drizzle over the caesar dressing and enjoy.
