Low Carb + High Protein Dessert Tacos

INGREDIENTS

Taco Shells
6 Farrah’s Low Carb Tortillas 
3 Tbsp Stevia/Sweetener
2 Tbsp Cinnamon
Olive Oil Spray

Filling
250g
Cream Cheese
1/2 Cup Greek Yoghurt
3 Tbsp Vanilla Protein Powder
1 Lemon, Juiced
1 Cup Blueberries (3/4 Filling, 1/4 to garnish)

METHOD

  1. Add all filling ingredients to a bowl and whisk well to combine. Pop blueberries so they burst and ripple throughout the creamy filling. 

  2. Cover and set aside in fridge until needed.

  3. Add sweetener and cinnamon to a plate, mixing together to combine.

  4. Spray tortillas with olive oil spray, then dip each side into churro-style mixture, pressing down lightly

  5. Working in batches, place tortillas one at a time into an air fryer with two ramekins on either side (to shape into hard-shell tacos). Cook tortillas for 4-5 minutes at 400°F/204°C or until golden. 

  6. Remove from the air fryer and spoon blueberry mixture into each taco. Serve family style, garnished with remaining blueberries and a light dusting of the churro-style mix. 

  7. Enjoy!

  • These dessert tacos would be just as delicious with strawberries, raspberries, or passionfruit!
