Low Carb + High Protein Dessert Tacos

INGREDIENTS
Taco Shells
6 Farrah’s Low Carb Tortillas
3 Tbsp Stevia/Sweetener
2 Tbsp Cinnamon
Olive Oil Spray
Filling
250g Cream Cheese
1/2 Cup Greek Yoghurt
3 Tbsp Vanilla Protein Powder
1 Lemon, Juiced
1 Cup Blueberries (3/4 Filling, 1/4 to garnish)
METHOD
Add all filling ingredients to a bowl and whisk well to combine. Pop blueberries so they burst and ripple throughout the creamy filling.
Cover and set aside in fridge until needed.
Add sweetener and cinnamon to a plate, mixing together to combine.
Spray tortillas with olive oil spray, then dip each side into churro-style mixture, pressing down lightly
Working in batches, place tortillas one at a time into an air fryer with two ramekins on either side (to shape into hard-shell tacos). Cook tortillas for 4-5 minutes at 400°F/204°C or until golden.
Remove from the air fryer and spoon blueberry mixture into each taco. Serve family style, garnished with remaining blueberries and a light dusting of the churro-style mix.
