ULTRA KETO BREAKFAST TACO

Serves: 4

INGREDIENTS

1 packet Farrah’s Ultra Keto Tortillas
12 rashers of bacon
2 Tbsp butter
6 eggs
2 avocados, sliced
2 jalapenos, sliced
2 cups of Spinach leaves
Sour cream
Hot sauce
Grated cheese
Salt and pepper
Fresh coriander, roughly chopped

METHOD

  1. Preheat oven to 180°C. Place bacon on baking tray and cook until crispy.

  2. Lightly toast tortillas in grill pan. Remove and cook spinach until just wilted.

  3. Melt butter in a large pan and pour whisked eggs into the pan. Season with salt and pepper. Lightly scramble for 2 - 3 minutes then set aside.

  4. To build, lay wilted spinach onto the grilled tortilla. Top with scrambled egg, grated cheese, sliced avocado and crispy bacon.

  5. Serve with a drizzle of hot sauce, roughly chopped coriander and a dollop of sour cream.
