Crumbed CAULIFLOWER TACOS
Ingredients
Farrah’s Low Carb Tortillas
Farrah’s Crispy Chicken Spice Mix
1 Cauliflower, cut into chunky florets
1 Egg
Red cabbage slaw (grated carrot and thinly sliced cabbage, combined)
Tomato salsa (tomato, red onion, and coriander, combined)
Sour cream drizzle (sour cream and lime juice, combined)
Method
Pre-heat oven to 200°C and prepare crumbing station – pour whisked egg into one bowl, and Farrah’s Crispy Chicken Spice Mix into a second bowl.
Toss cauliflower in whisked egg, then coat in spice mix and arrange on a lined baking tray. Bake for 20-30 minutes until golden, crispy, and cooked through.
Heat Farrah’s Low Carb Tortillas in a dry frying pan for 5-10 seconds, until soft and warm. Fill with red cabbage slaw and top with the crunchy cauliflower, salsa, and coriander.
Drizzle sour cream mixture over the tacos and enjoy!
