Crumbed CAULIFLOWER TACOS

Ingredients

Farrah’s Low Carb Tortillas
Farrah’s Crispy Chicken Spice Mix
1 Cauliflower, cut into chunky florets
1 Egg
Red cabbage slaw (grated carrot and thinly sliced cabbage, combined)
Tomato salsa (tomato, red onion, and coriander, combined)
Sour cream drizzle (sour cream and lime juice, combined)

Method

  1. Pre-heat oven to 200°C and prepare crumbing station – pour whisked egg into one bowl, and Farrah’s Crispy Chicken Spice Mix into a second bowl.

  2. Toss cauliflower in whisked egg, then coat in spice mix and arrange on a lined baking tray. Bake for 20-30 minutes until golden, crispy, and cooked through.

  3. Heat Farrah’s Low Carb Tortillas in a dry frying pan for 5-10 seconds, until soft and warm. Fill with red cabbage slaw and top with the crunchy cauliflower, salsa, and coriander.

  4. Drizzle sour cream mixture over the tacos and enjoy!
