Kumara & Feta Rolls

Makes 12

3 Farrah’s Fire Roasted Pepper Wraps
2 medium gold and orange kumara (roasted)
½red onion (roasted)
Baby spinach leaves
Thyme
Feta
1 tbsp melted butter
Salt and pepper
Sesame seeds
Tomato relish or chutney

Preheat oven to 180°C. Line a baking tray with baking paper.

In a bowl, combine the roasted kumara and red onion with a few pieces of crumbled feta. Sprinkle with a few thyme leaves. Season with salt and pepper.

Lay a wrap on a board and lightly spread with tomato relish all the way to the edges. Down the centre of the wrap layer a few spinach leaves and 1/3 of the kumara mixture. Roll up the wrap tightly around the mixture and slice into 4 pieces. Place each piece onto the baking tray, seam-side down. Lightly brush with butter and sprinkle with sesame seeds. Repeat with the remaining wraps.

Bake for 20-30 minutes or until the wrap is golden and crispy.

Serve warm or cooled with a side of chutney, relish or tomato sauce…enjoy!

  • Get creative with different wrap flavours and fillings – try adding some pine nuts to the mixture or using other seasonal vegetables like pumpkin.
